Instructions
Put the entire carton of chicken stock in the instant pot and add the spices. Mix together before adding chicken.
Place the chicken in the instant pot in a single layer. Cook on high pressure for 30 mins.
Flip the pressure valve and allow all of the pressure to escape the instant pot before removing the lid. You will know you’re ready to remove the lid when the red button next to the pressure valve goes down.
Fit the paddle attachment in the kitchen aid or a dough blade for the food processor whichever you are using. Remove the chicken from the instant pot and remove any of the less desirable pieces of the chicken. I’m super picky about chicken and avoiding the gristle! Once you’ve cleaned up your chicken, put it into the mixing bowl of your kitchen aid or food processor. Turn the kitchen aid on low and allow the paddle to shred the chicken. For a food processor, plus the blade a few times until it’s shredded. It only takes a few times.
