Sugar Free Chocolate Peanut Clusters

Use this recipe for Sugar Free Chocolate Peanut Clusters to make a delicious snack that will satisfy your sweet tooth without spiking your blood sugar.

I was so excited when Lily’s started selling milk chocolate chips because it gave me back my favorite candy possibilities and allowed me to remain sugar-free. Lily’s does sell chocolate-covered peanuts for about the same price as a bag of their chocolate chips which is why this recipe makes much more sense. You get nearly 5 times the amount for only about $2 more. Very cost-effective!!

 

Sugar-Free Chocolate Peanut Clusters

 

Ingredients: Click the Ingredients for links!

1 Bag – Lily’s Milk Chocolate Chips
2 Cups – Roasted Unsalted Peanuts

 

Instructions:

1. Place the entire bag of chocolate chips in the glass bowl and microwave for 15 seconds. Remove the bowl and stir with the wooden spoon. Put the bowl back in the microwave for 10 seconds then stir and repeat. I needed to do 4-5 intervals of 10 seconds to get the chocolate completely melted.

I know this might seem pointless and you might be asking yourself, “What difference does it make if it’s 10 or 20 seconds at a time?” The difference is liquid chocolate that solidifies and liquid chocolate that stays liquid. Be patient and do it right, wasting chocolate is a sin!

When you get to the 4th interval stir the chocolate for 30 seconds. If after stirring for about 30 seconds, not all the chips have melted in, microwave one more time for 5 seconds and that should do it.

2. Pour the peanuts in the melted chocolate and stir until every peanut is coated.

3. Line a cookie sheet with parchment paper. With a spoon, drop a small number of peanuts (5-8) on the sheet pan making sure the clusters aren’t touching.  Don’t focus on the number of peanuts too much, make them as big or small as you want.

5. Place them in the fridge to harden. Once each cluster is hardened, store in a zipper bag in the fridge.

    I only had Lilly’s White Chocolate chips and Lily’s Dark Chocolate mini chips so I combined all the white chocolate chips and 1/2 c of the mini chips and melted together and added almonds. They are amazing!!
