Use this Sugar Free Chocolate Covered Almonds recipe to make a delicious snack that will satisfy your sweet tooth without spiking your blood sugar.
I was so excited when Lily’s started selling milk chocolate chips because it gave me back my favorite candy possibilities and allowed me to maintain my Trim Healthy Mama diet. My husband and I were buying the chocolate covered almonds that Lily’s sales but they are so expensive, about $5 to $6 for 3.5oz.
We are always looking for ways to do things ourselves and save money so we purchased 2 cups of almonds and 1 bag of Lily’s milk chocolate chips and got 5x as many for the same price of 1 bag of Lily’s Chocolate Covered Almonds. Often times we are able to find Lily’s chocolate chips on sale which is even better!
Sugar-Free Chocolate Covered Almonds
Ingredients:
1 Bag – Lily’s Milk Chocolate Chips
2 Cups – Raw Almonds
Instructions:
1. Place the entire bag of chocolate chips in the glass bowl and microwave for 15 seconds. Remove the bowl and stir with the wooden spoon. Put the bowl back in the microwave for 10 seconds then stir and repeat. I needed to do 4-5 intervals of 10 seconds to get the chocolate completely melted.
I know this might seem pointless and you might be asking yourself, “What difference does it make if it’s 10 or 20 seconds at a time?” The difference is liquid chocolate that solidifies and liquid chocolate that stays liquid. Be patient and do it right, wasting chocolate is a sin!
When you get to the 4th interval stir the chocolate for 30 seconds. If after stirring for about 30 seconds, not all the chips have melted in, microwave one more time for 5 seconds and that should do it.
2. You can toast the almonds beforehand if you like them toasted. Put them in the oven for about 10 mins at 350° or until you start to smell them.
3. Pour the almonds in the melted chocolate and stir until every almond is coated.
4. Line a cookie sheet with parchment paper. Drop the almonds one by one on the sheet pan making sure they aren’t touching.
5. Place them in the fridge to harden. Store in a zipper bag in the fridge.
