Spicy Bread & Butter Pickles

Use this recipe to make Spicy Bread & Butter Pickles that are guilt-free because they’re sugar-free. They are the perfect addition to any sandwich or just a great snack!

Have you ever had a craving for something you’re not supposed to eat? Who am I kidding we all have!

This recipe came from one of those moments. Spicy pickles of the bread & butter variety are one of my favorite snacks but because my family and I try to be sugar-free traditional bread & butter pickles were out of the question.

The other day when I was experiencing an extreme lack of will power and was about to add the bad kind of pickles to my grocery cart, I decided to try to make my own sugar-free version and share it with you guys!

I hope you love them as much as my family and I do!

 

Pro-Tips:

  • You can make these as spicy or not spicy as you want by increasing or decreasing the cayenne, red pepper flakes and jalapeños.
  • If you prefer the taste of a different pepper, like chipotle or habanero you can use those interchangeably.
  • Cutting the cucumbers as evenly as possible will give you a more consistent flavor.

 

 

Spicy Bread & Butter Pickles

 

 

Tools (Click on the tools for links to the ones I used):

Mandolin – This is optional by encouraged
32oz Mason Jar with a lid

Ingredients:

1 lb – Mini Cucumbers
¼ to ½ – White Onion
1 cup – Gentle Sweet (you can sub in Truvia as well but Gentle Sweet gives the best flavor)
1 cup – White Vinegar
½ cup – Apple Cider Vinegar
3 – Diced Garlic Cloves
1 ½ tsp – Mustard Seeds
1 tsp – Celery Seeds
¼ tsp – Turmeric
1 tsp – Crushed Red Pepper Flakes
2 tsp – Diced Canned Jalapeños
Dash Cayenne

Instructions:

1. Wash the cucumbers and slice both ends off of each one.

 

2. Using the mandolin cut the cucumbers into ¼ inch slices. I used the 7mm plate to cut the cucumbers. Slice the onions using the 3mm plate. If you are using a knife just slice them very thin, almost shaved.

3. Layer the cucumbers and the onions in the mason jar and set aside.

4. Combine all the other ingredients in a saucepan and simmer until all of the Gentle Sweet is dissolved.

5. Pour the pickling liquid over the cucumbers and onions in the jar. Place the lid on tightly and shake the jar to distribute the spices evenly through the liquid.

6. Remove the lid and allow the jar to sit on the counter to 1-2 hours.

7. Store in the refrigerator for 4-5 weeks in the mason jar or other airtight container.
