Sugar-Free Sweetened Condensed Milk

Use this recipe to make Sugar-Free Sweetened Condensed Milk (heavy cream) that can be frozen for easy access. Having this on hand is so important for anyone avoiding sugar.

My family and I are mostly sugar-free with a sizable emphasis on the “mostly”. We do our best LOL! But I have found in the past that I automatically rule out any recipe containing sweetened condensed milk because of the sugar content. If you know anything about baking, you know that eliminates a huge number of desserts. 

I finally got fed up with the restriction and decided to try to create a recipe that would fit into our diet. By using heavy cream instead of milk this recipe goes from containing a lot of lactose to virtually no lactose which is good for two reasons. First, because that means it’s virtually sugar-free and second because people who are lactose intolerant would likely also be able to tolerate this version! 

 

Pro-Tips:

  • Once the Gentle Sweet is completely dissolved the only time you should whisk it is when it’s foaming up and about to overflow; a gentle whisk will make the foam die back down.
  • Keep a close eye on the simmer to make sure it doesn’t simmer over onto the stove. I may or may not be speaking from experience…a very messy experience. 
  • You can use any nut milk you want for this recipe if you’re dairy-free.
  • This recipe can be frozen to prolong the freshness for 4+ months. It’s also helpful to freeze in Ziploc bags in commonly used amounts so you are able to defrost the exact amount needed at any given time.
  • If you do not have Gentle Sweet you can click the link below to order some. It truly is the best tasting natural sweetener I’ve ever had. You can use whatever sweetener you prefer just make sure you have the correct conversion. 

 

Sugar-Free Sweetened Condensed Milk

 

Yield: 

Appx. 2 cups

 

Ingredients:

1 cup – Gentle Sweet
4 cups – Heavy Cream

 

Instructions:

1. Combine the Gentle Sweet and heavy cream in a saucepan and put over medium-low heat. Whisk until the Gentle Sweet is completely dissolved.

2.Once the Gentle Sweet is completely dissolved the only time you should whisk it is when the heavy cream is foaming up and about to overflow. A gentle whisk will make the foam die back down.

4. Continue to simmer for 45 mins or until the heavy cream has reduced by 1⁄2.

 

5. Once the heavy cream is reduced, transfer it to an airtight container and allow to cool before placing the lid on the container. When it’s completely cooled, place the lid on and store in the fridge or freezer. See the pro-tips section above for helpful tips on storage.

Special Note for Trim Healthy Mamas: 
This sweetened condensed milk has 32 net carbs per cup. You need 1 cup to make 6 cups of ice cream which means this ingredient contributes appx 5 net carbs to each cup of vanilla ice cream.
