Use this recipe to make Instant Pot Shredded Chicken. It’s quick, easy and delicious and is a great start to any meal.
This is by far one of the most versatile recipes I have in my kitchen. We use this chicken for just about everything from pulled chicken BBQ sandwiches to chicken tostadas to BBQ chicken pizzas.
Every time I start making this chicken one of my girls will ask if we are having BBQ Chicken Pizza. That is their favorite way to use this chicken.
The recipe for low-carb, sugar-free BBQ Chicken Pizza is linked below if you’re interested in checking that out. And let’s be honest, am I the only one who’s made it all the way through the day when just before dinner time I remember that I need to cook dinner? Just me? This recipe is PERFECT for those days.
This recipe is one that I batch cook at the beginning of a week and store in the fridge. I’m a homeschooling mom with a husband who works from home most days, so I cook 3 meals a day for my entire family. Anything I can do to make these meals easier is a win for me.
We add the batch cooked shredded chicken to fresh salads, we use it to make chicken salad that we out in pitas, we warm it up in a pan with some taco seasoning and put it in a quesadilla. Seriously, the possibilities are endless!
PRO-TIPS:
- If you have a few extra minutes, feel free to use a fresh onion in place of the onion powder and a few crushed garlic cloves in place of the garlic powder. It will ramp up the flavor and use up some produce you have sitting around.
- If you have a kitchen aid stand mixer or a food processor with a dough blade, use them to shred the chicken. It’s way easier and such a time saver.
- If you’re like me and forget to defrost your chicken, this recipe works when your chicken is frozen. Double the cooking time to 60 minutes. When the 60 minutes is up, check the chicken to see if it’s shreddable. Depending on the size of the breasts you may need to add a few mins.
- Don’t remove any of the nasty parts of the chicken before you add it to the instant pot. All of that will add to the flavor. If you see some yucky parts of the chicken as you’re removing it from the instant pot, remove it before you put the chicken in the mixer or food processor.
Instant Pot Shredded Chicken
Tools Needed:
Instant Pot (I’ve linked to my instant pot here if you’re interested in one)
Yield:
5 cups Shredded Chicken
Ingredients:
3 – Boneless Skinless Chicken Breasts
1 tbsp each – Garlic Powder, Onion Powder, Salt, Black Pepper
1 quart – Chicken Stock or Chicken Bone Broth
Instructions:
1. Put the entire carton of chicken stock in the instant pot and add the spices. Mix together before adding chicken.
2. Place the chicken in the instant pot in a single layer. Cook on high pressure for 30 mins.
3. Flip the pressure valve and allow all of the pressure to escape the instant pot before removing the lid. You will know you’re ready to remove the lid when the red button next to the pressure valve goes down and there is no more steam escaping the vent.
4. Fit the paddle attachment in the kitchen aid mixer or a dough blade for a food processor. Remove the chicken from the instant pot and remove any of the less desirable pieces of the chicken.
I’m super picky about chicken and avoiding the gristle! Once you’ve cleaned up your chicken, put it into the mixing bowl of your kitchen aid or food processor. Turn the kitchen aid on low and allow the paddle to shred the chicken.
For a food processor, pulse the blade a few times until it’s shredded. It only takes a few times.
5. Now you have the perfect start to any recipe calling for shredded chicken!
