For the past 2 Christmases, we’ve put on an incredible Christmas play at our church that our Pastor wrote based on The Polar Express, called The Polar Express: A Ticket Home. It was an incredible experience that we all felt blessed to be a part of. We created a drink in the church cafe to go with the play and we called it The Polar Expresso. It is so delicious, that this is the third year in a row we are bringing it back and people order it throughout the year. Since our cafe is only open on Sundays and special occasions, I needed to find a way to recreate this at home but I needed a sugar-free healthy version. I also had a few other problems to solve, wasting half-and-half because I buy it in bulk and don’t drink it fast enough, and I don’t have time to be making gourmet lattes every morning!
Most mornings my family is in a hurry, so making coffee at home is usually the first thing I sacrifice to keep us on schedule. For most of us, that means a quick trip to Starbucks and extra money we don’t need to spend. This hack will make your morning coffee sacrifice a thing of the past. Brew the coffee, pour in this delicious Peppermint Mocha Coffee Creamer and you’re done!
As an additional bonus, if you’re like me and don’t use the half-and-half before it goes bad, you can portion the creamer into 4oz Condiment Cups and put them in the freezer. At the beginning of the week, I put 4 or 5 of the cups in the fridge to defrost and leave some in the freezer. That gives me the option to have hot coffee or iced coffee. Because you left the creamer in the freezer, you don’t need to add ice to your iced coffee, you can add the frozen creamer cube your iced coffee won’t get watered down! This is a win, win, win! You spend 15 mins, once every 2 weeks to save ingredients, time, and money!

SUGAR-FREE PEPPERMINT MOCHA COFFEE CREAMER
YIELD:
14 Condiments Cups (Filled 3/4 full)
TOOLS NEEDED:
4oz Condiment Cups
INGREDIENTS:
1 Quart – Half & Half
1 Cup – Sugar-Free Cocoa Powder
1 Cup – Truvia (You can substitute Gentle Sweet or Super Sweet)
1 tsp – Peppermint Extract
INSTRUCTIONS:
1. In a small sauce pot add the half & half and bring to a light simmer on medium heat. Make sure the heat isn’t too high, half & half scorches pretty easily so just keep an eye on it and stir frequently.
2. Once the half and half is simmering, add the cocoa powder and whisk until it’s completely incorporated.
3. Add the Truvia and stir until dissolved.
4. Once the cocoa powder is completely dissolved, add the peppermint extract and stir.
5. Remove from the heat and allow to cool. Once it’s had a chance to cool a bit, 10-15 mins, pour the creamer into the continent cups until each one is about 3/4 full.
6. Store in the fridge or freezer or a few in each.
